Pecan Pie Muffins with brigadeiro sauce icing

 

 

I love baking from scratch versus using a boxed mix from the store because everything homemade has more flavor. But when I saw that Mad Dash Mixes had this pecan pie muffin mix available I had to give it a try! 

 

When I received the mix in the mail I could smell it through the package and it was absolutely delicious. I was going to wait to make this batch for one of the Christmas potluck parties I usually go to at the end of the year but I just couldn't resist it!

 

For this specific recipe I decided that a brigadeiro sauce would go perfect as the icing. Brigadeiro is a Brazilian sweet treat usually made in a format of a small ball and covered with sprinkles, it's one of my childhood favorite desserts. It is super easy and simple to make and the secret is patiently waiting for the sauce to thicken up while continuously stirring it.

 

So let's get started with the recipe, here are the ingredients you will need to make your Pecan Pie Muffins with brigadeiro sauce icing:

 

Pecan Pie Muffins

1 Pecan Pie Mad Dash Mixes Pouch

2 Beaten Eggs

1/2 Stick of butter

3/4 cup of pecans

 

 

 

 

 Brigadeiro Sauce Icing

1 can of condensed milk

8 spoons of powdered chocolate

 

 

 

Out of this batch I was able to make 12 regular muffins which probably means you can make double of that if you were to make mini muffins. I also used cupcake liners to bake the pecan pie muffins but if you decided to skip on the liners be sure to spray the pan with flour based cooking spray to prevent from sticking.

 

Now, on to the instructions on how to make these delicious pecan pie muffins.

 

Pecan Pie Muffins

Pre-heat oven to 350 degrees Fahrenheit. In a mixing bowl add the beaten eggs and butter, mix them well together then add the Mad Dash Mixes Pecan Pie Muffin mix. Mix it well then last add the pecans.

 

Fill muffin tins with mix and put in the oven for 6 - 9 minutes. Insert a toothpick and if it comes out clean then the muffins are ready to come out of the oven. Wait for them to cool off before adding the icing.

 

Brigadeiro Sauce Icing 

Turn medium heat and add the condensed milk and eight spoons of powdered chocolate to a sauce pan. Stir continuously until mix starts to stick off of the pan but don't let it get too thick as we want it to be saucy and not too thick. Then remove from heat and wait for it to cool off for about 5 minutes. With the brigadeiro sauce still a bit warm, start to top your muffins with it.

 

 

 

 

The final result of the pecan pie muffins were a total party in our mouths. I never thought that I would say this but it tasted very much like homemade muffins, just as delicious and super fluffy, just as our family likes it. The brigadeiro sauce was definitely the icing on the cake, no pun intended! Mad Dash Mixes definitely exceeded my expectations on this one.
